BOSTON (August 25, 2009): Bon Savor Co-Owners Ibonne Zabala and Oleg Konovalov are excited to announce their new Executive Chef Marco Suarez. The unique cuisine offered at this Jamaica Plain favorite (Runner-up as Best Gourmet Latin Cuisine in The Best of El Planeta Poll) combines South American and French culinary traditions with an additional emphasis on vegetarian and vegan alternatives, making this industry favorite a perfect fit to helm the kitchen.

Chef Suarez, former executive chef at Eastern Standard, became interested in food through both his European and South American heritages. With French training, Suarez has a lifetime of experiences under his belt, both personally and professionally. After gaining insight into the culinary culture of his roots traveling through Europe, he swapped continents to do the same in South America, Argentina.

In addition to his personal forays, Suarez has a wealth of restaurant experience starting out his career in New York’s Hudson Valley and Breckenridge, Colorado before moving to Boston, where his resume continues to grow. The impressive list of restaurants he has been a part of includes Tremont 647, Bouchee, Top of the Hub and most recently Eastern Standard.

Suarez’s diverse background and unique blend of different culinary techniques will mesh well with Bon Savor’s ongoing evolution. The objective behind the restaurant, which opened initially as a French bistro, has always been to grow and incorporate other culinary traditions. Thus far they have definitely succeeded, recently re-launching the restaurant and introducing the South American- French Menu, and the addition of Suarez to the restaurant’s team will serve to help further this goal.

The current seasonal menu is a showcase of dishes that demonstrate the restaurant’s blend of French and South American cuisine using local, healthy and fresh ingredients. Bon Savor has just introduced their new Raw Bar, featuring fresh seafood including Island Creek oysters and local little neck clams, making Bon Savor the only restaurant in Jamaica Plain with a raw bar. Appetizers including the Baked Argentinean Empanadas and the Peruvian Ceviche, with local stripped bass, Peruvian chiles and local vegetables, are sure to please any palate, as well as Entree choices such as the Steak Argentina, with Argentinean parsley and garlic chimichurri, and the Sage Roasted Chicken, with brussels sprouts and summer vegetables.

Vegetarians can enjoy Appetizer favorites such as the Ensalada de Chayote, with corn, bell peppers, avocado moisse and spiced crispy tortillas and the Veggie Para Rellenas with gouda, tomatoes, scallions and sauce piquant as well as Entrees including the Veggie Crepes, with Mornay sauce and the Arroz con Vegetales, a risotto served with summer vegetables and parmesan.

Bon Savor offers a carefully selected list of Chilean, Argentinean, Spanish, French and Organic wines, available by the tasting, glass or bottle. Bon Savor features a 3 course prix-fixe menu for $25, and a 3- course vegetarian or vegan prix-fixe menu for $21. Bon Savor also serves weekend brunch that is worth waking up for, including a French Breakfast Combo: a glass of house wine or champagne, a small French press coffee, homemade croissant and choice of Eggs Benedict or a create-your-own omelet for only $13.95.
